For leaner roasts, such as sirloin and round roast, I do not recommend using the crockpot cooking method. To cook them, I use the English-style fast-cooking technique that leaves the roasts rare in the center. Slow-cooking should be reserved for tougher meats, which require a longer cooking time in order to bring out their best qualities.
