This roast has alternating layers consisting of fat, bone, and gristle. This roast has more gristle and larger meat fibers than an arm-roast, but it cooks down into deliciously tender pieces of gelatinous taste. It’s so good, you won’t believe it.
Shank roast This is a roast that looks like an arm roast but with more bones. The roast is cut into 1″ thick pieces that are about half bone and half meat. It doesn’t look appealing until you try it. This part of the arm has a very tender meat. The bones make a delicious buttery gravy which can be used to make stock. This may be your new favorite after you try it once!
For leaner roasts, such as sirloin and round roast, I do not recommend using the crockpot cooking method. To cook them, I use the English-style fast-cooking technique that leaves the roasts rare in the center. Slow-cooking should be reserved for tougher meats, which require a longer cooking time in order to bring out their best qualities.

Directions (beef roast)
- Season chuck roasts with salt and black pepper. Heat oil in a large pan over high heat. Add roast and sear until brown, approximately 4 minutes on each side.
- Sprinkle soup mix over the roast. Sprinkle carrots, potato, onion and celery over the top. Add water.
- Cover and cook at low for 8-10 hours.
