  • 110g (4oz) flour

  • 1 tsp white wine vinegar
  • 75g / 3oz ready-made mayonnaise
  • Dijon mustard, 1 teaspoon
  • 1 tablespoon capers, washed and chopped
  • 25g dill / 1 oz dill, finely chopped
  • Use pinch of salt
  • 1 garlic clove, crushed
  • 15ml / 1 tablespoon extra virgin olive oil

Salad

  • 2 heads little jem
  • 25g / 1 oz parmesan shavings
  • 1 tablespoon capers
  • 1 small bundle of dill

Instructions

  1. Mix together the breadcrumbs, grated Parmesan and panko.
  2. Add the milk and whisk it together.
  3. Then, divide the fish into four equal portions. Then dip your fish in flour, then egg mixture, and finally your cheesy crumbs. Set the breadcrumbs in the refrigerator.
  4. Pour the dressing, combine the parmesan with the vinegar in a food processor. Blend until smooth.
  5. Blend again the mayonnaise with the mustard, capers and salt. Add the chopped dill and olive oil.
  6. Separate the leaves from the stalk of the gem lettuce. Wash the salad in water to remove dirt, then dry it thoroughly with a towel.
  7. Heat the olive oil over a medium heat and add the plaice fillets that have been crumbed.
  8. Drain your fish well using kitchen towels after frying it on both sides for two minutes until golden. Turn the fish with care. You don’t want the pliece to break apart if you remove its skin.
  9. As the fish cools, toss in the small gems with the dressing. Be sure to coat each leaf with the dressing.
